Chicken Tenders Chef Salad

Ingredients:

  • 1.5 lb. bag of Paradise Kitchens Breaded Chicken Strips
  • 6 cups mixed salad greens (such as lettuce, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup sliced red onions (optional)
  • 1/4 cup sliced cucumbers (optional)
  • 1/4 cup sliced bell peppers (optional)

For The Dressing:

  • 1/4 cup olive oil
  • 2 tbsp. balsamic vinegar
  • 1 tsp. Dijon mustard
  • 1 tsp. honey
  • Salt and pepper to taste

Instructions:

  1. Preheat your air fryer to 350°F. Place the chicken tenders in your air fryer basket in an even layer. Air fry the chicken for 9-15 minutes. You are looking for a minimum internal temperature of 165°F.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper until well combined. Set aside.
  3. In a large salad bowl, toss mixed greens with cherry tomatoes, shredded cheese, and any optional ingredients you desire such as red onions, cucumbers, or bell peppers.
  4. Once the chicken tenders are cooked through, remove them from the oven and let them cool slightly.
  5. Slice the chicken tenders into bite-sized pieces and add to the salad.
  6. Drizzle the prepared dressing over the salad and toss gently to combine, ensuring all ingredients are evenly coated.
  7. Serve immediately, garnished with additional cheese, or freshly ground black pepper if desired.
