Breaded Chicken Dinner with Mini Potatoes and Green Beans

Ingredients:

  • 1.5 lb. bag of Paradise Kitchens Breaded Chicken Filets
  • 1 lb. mini potatoes, washed and halved
  • 1 lb. green beans, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 425°F.
  2. Place the halved mini potatoes on a baking sheet. Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika. Toss the potatoes to coat them evenly.
  3. Roast the potatoes in the preheated oven for about 20-25 minutes or until they are tender and golden brown, stirring halfway through.
  4. Preheat your air fryer to 350°F. Place the chicken filets in your air fryer basket in an even layer. Air fry the chicken for 9-15 minutes. You are looking for a minimum internal temperature of 165°F.
  5. While the potatoes are baking, bring a pot of salted water to a boil. Add the trimmed green beans to the boiling water and cook for about 3-4 minutes or until they are crisp-tender.
  6. Drain the green beans and rinse them under cold water to stop the cooking process. Set aside.
  7. Once everything is cooked, divide the roasted mini potatoes, green beans, and breaded chicken filets among serving plates.
  8. Serve hot and enjoy!
